If you didn’t , let me know – so that we can change that asap! If you have a baking query, let me know – I am no expert in baking, but i might be able to help you out thanks to my many hits and misses in my kitchen. If you ‘ d like me to post a particular recipe, then please let me know – I would LOVE to try anything new!

    I tried your vanilla and chocolate fatless sponges. The vanilla was ok but the chocolate was a disaster! It shrunk and dipped in the center while cooling. Why do you think this happened?

    1. Hi Asha… sorry to hear that ! what did you do different ? same size pan and baking time as the vanilla ? and the cocoa was the same amount as the recipe ?

    1. Hi Parul… Sorry for the late response- was travelling for a bit ! You can use the vanilla cake from vegan vanilla cake or eggless vanilla chocolate chip cake on the blog ( without the chocolate chips ) . Divide the batters into different mixing bowls and add different colours to each . You will need to bake in batches and make two or three coloured cakes at a time.. that depends on how many pans of same size you have and how big ur oven is… Hope this helps !

  4. Hi I tried baking your fork chocolate cookie recipe but they were not sweet at all. Your recipe says 50 gms sugar but I think its a typo error and it should be 150 gms. Please let me know as soon as possible as I would love to try this recipe again. I have previously tried some eggless recipes of yours and they have worked for me.

    1. Hi Priyanka …. first of all, thanks for trying the recipes ! And It is 50 grams castor or granulated sugar (1/4 cup) … no typo there. They are lightly sweet cookies… if the sweetness isn’t enough , you can increase it to 75 grams or 100 grams. 150 grams would change the texture and be far too sweet! If you try again , let me know 🙂

  5. Hi Akshata…love ur site, simple to follow recipes and beautifully captured pics of the end product. In your Cream Cheese Brownies recipe u have used Dlecta brand of cream cheese, would like to know where I can get this in Bengaluru.

    1. Hi Darshana … thanks so much for the lovely comments ! I have used D’lecta but you can use any brand cream cheese. I have seen D’lecta in bigger supermarkets like Hypercity , Foodhall and Nature’s Basket . Amazon was selling it too a while back!

    1. Hi Shubha ! Glad you liked the cake ! You can use any icing – whipped cream , ganache or butter cream ..

  7. Hi Akshata! I follow your recipes and love your writing style. I’ve a query to ask. I’ve a 28 ltr OTG. I tried using an 8×12 inch tin in it by placing it lengthwise into the oven. It its not touching the end & there is half inch gap. Can I use this tin or go for a smaller size? Will it bake evenly?

    1. Hi Rashmi …. thank you so much ! and you can use a pan as long as it doesn’t touch the sides of the oven . But since your pan is an exact fit , be really careful while moving the tin in and out of the oven so that you don’t burn yourself. while baking , if you feel one side is browning more , just turn the pan around midway baking.. hope this helps!

    1. Hi Smruti… thank you so much for your sweet words. I haven’t tried an eggless version of the fudge cookies, you could try omitting the egg and using a 1/4 cup thick curd instead. Give me some time and i ll work on an eggless cookie soon!

  9. Hi Akshata, can I know which brand of dark chocolate & cocoa powder you use? I like using couverture chocolate only but it’s not readily available. Do you have any recommendations from online sources?

    1. Hi Rashmi… for both chocolate and cocoa powder , I use and love Cocoa craft. They have their own website and you can order from Amazon also. Mii is another brand available on Amazon. You get Callebaut chocolate and cocoa powder on ccds website. You can check the links below !

    I keep oggling at your page for recipes . Iv always wanted to know how do you come up with the perfect ratios for baking. If i have to build my own cake, how do i go about it?

    1. Hi Pavithra .. Thanks so much for the appreciation. Unfortunately , I am usually more a “trier and tester ” of recipes than a “recipe creator” . Even when I do make my own , its by studying other recipes . That said , there are formulas to come up with your own cake recipes… like the sugar should be equal to flour ,eggs should be equal to butter (by weight) and 1 tsp baking powder for 1 cup flour etc. Have a look at this link http://www.finecooking.com/articles/ratios-for-great-cakes.aspx?pg=1 . For a more in-depth understanding of this though , I would suggest books like Baking Bible and How Baking works!

    1. Hi Chaits ! Thanks for visiting my space .. and the mango cakes will be as good with canned mango. Just check if it is sweetened or not and adjust sugar accordingly… Happy baking !

    1. Thanks so much Shama … ! I haven’t had much luck with the eggless Japanese cheesecake so far but lets see :-). The chocolate tart will be up soon for sure!

  15. hi.. i am about to try the swedish chocolate cake.. it looks super !! only, i need to frost it with chocolate ganache and thinking of wrapping it kitkats all around the sides.. will all this work?? is it too gooey for this??? or will be become excessively chocolaty?? thanks.

  17. Have you tried making frosting from coconut cream? I’m trying to look for baby friendly recipes…and there are many sites that talk about whipping coconut cream/thick milk.

  20. Hi Payal… replace with 1/2 cup thick curd . Instead of adding 2 tsp baking powder, use 1 1/2 tsp powder and 1/2 tsp baking soda.

  22. Thank you so much Sonam. You can make a pineapple cake by either using the sponge cake (how to make a perfect sponge) or the hot milk sponge cake. Use vanilla extract if you can’t find pineapple. You can follow the recipe as in pineapple pastry on the blog. Let me know if I can be of more help !

Is it a good idea to do a vanilla sponge cake +the pineapple icing recipe you have posted. How different is the vanilla sponge cake from the plain sponge cake.

  26. Thanks Veens…! If you are making a vanilla, banana or chocolate layer cake , you can just spread some butterscotch chips on top of the frosting / cream in between the layers. You can also mix the chips into any basic vanilla/chocolate/ caramel / banana cake recipe you have at the end (make sure to dust with flour so they don’t sink!) . You’ ll have a lovely buttercotchy flavour throughout . You can also add these to any soft or chewy cookie , brownie or blondie. Same with ice-cream , you can add over served ice-cream for that extra crunch or when you are making the base, melt it and mix before freezing. I like it with vanilla or banana ice-cream. You can also pulse it in your mixer once and swirl the crush into your ice-cream. Its lovely.

    Ive been thru your website and like the recipes .. will be trying them soon.. I have some butterscotch chips (just like choco chips) in my fridge.. Can you let me know of a good cake or pudding or icecream recipe where i can use the butterscotch chips … Thanks Veens
