Guava lava cookies #creativecookieexchange

This month’s theme for the Creative cookie exchange was unexpected and exciting – tropical cookies ! I have lived most of my life along a coastline somewhere . Something fruity was on the cards and I knew I wanted to do with something with Guavas. Guavas are so ignored and forgotten when it comes to baking , I feel for the fruit. I really do.

Confession time : these cookies although easy enough, aren’t the quickest to make . Making the guava filling takes a bit of pureeing , stovetop action and chilling . Of course you could use readymade guava paste or guava cheese ,if you can get your hands on some.

But they are soon good. So buttery and crumbly . And you are in for a surprise when you bite into that little oozing guava lava ( btw i was so proud of myself for coming up with that name !) . Its sweet and sticky and just little an explosion of brightness in your mouth, if that makes sense.

You need to try these ! And dont forget to check out what everyone else is making for the exchange. Pineapples , coconut , passion fruit, nuts , limes ..  just going through the list will want you to set packing to warmer locales !

You’ll need :

For the cookie :

  • 115 grams or ½ cup unsalted butter
  • 90 grams or ¾ cup icing sugar
  • 1 egg, at room temperature
  • 1 tsp vanilla extract
  • 190 grams or 11/2 cups all purpose flour
  • Pinch of salt

For the guava filling :

  • 2 medium sized guavas or ½ cup guava puree
  • ½ cup granulated sugar

Makes : about 16 cookies
Time : about half hr prep + 30 mins chilling + 25 mins baking time

Lets get started :

First lets make the guava filling. Chop up the guavas and puree in your blender / juicer /processor . Pass the puree through a sieve to remove seeds and any gritty bits.

Heat with the granulated sugar in a thick bottomed saucepan.

Bring to boil and then simmer for around 15 minutes as it gets thick and sticky.

Spread the paste in a parchment lined pan. Chill in the freezer for half hour.

Now the cookie dough. Beat the butter and icing sugar until light and fluffy.

Mix in the vanilla and egg . Beat well.

Add the flour and salt. Beat until dough forms.

Cling wrap and refrigerate the dough for 15 to 20 minutes until its easier to handle. Meanwhile preheat your oven to 160 C and line a cookie sheet with parchment { or grease with butter ) .

Cut the guava filling into squares of about one cm .

Make balls of dough about 2 cm in size and flatten. Place one square of guava filling in the centre . Pull the dough over the filling from all sides. Smoothen and shape into rounds.

Place the filled dough balls on the prepared pan about 2 inches apart . Bake at 160 c for 25 minutes .

Cool on wire rack.

Also :

  • Store cool cookies in an airtight container at room temperature fo upto 5 days.
  • For an easier filling option , use ready made guava paste , any fruit jam (chilled ) .

 

 

Although these cookies didn’t turn out exactly as i had envisioned , I was extremely happy. The crisp exterior with the meltaway shortbread-esque insides with that gooey guava lava centre.  A bite of the exotic and the tropic wherever you are !

  3. Great name and beautiful cookies too! I grew up with guava paste or cheese but I have never thought to make it myself. You make it look rather easy though. What a wonderful idea to stuff it in some cookies!

  9. Guava will always remind me of my childhood. My Mom would make a sweet dessert soup and jam with the fruit from our tree. I can still remember the smell. Your cookies look delicious!
