Rose coconut pudding bites !

If the name sounds odd, I have to be frank……I honestly don’t know what to call these !

As holi is around the corner , I wanted to make a rose flavoured dish and considered making a rose pannacotta. Then I toyed with the idea of making it a rose coconut pannacotta as Rose and coconut go together famously ! But I thought of ditching gelatinous this time and keeping the pannacotta vegetarian by using agar agar. Which I didn’t have in my kitchen. What I did have was corn flour. But corn flour wouldn’t make a pannacotta set without messing up its texture. So why not a pudding. So rose and coconut pudding it was !

But I couldn’t find any moulds / cups I could use for the pudding that I was happy with . So I thought – why not make the pudding bite sized ! Pick up and eat on the go. So I upped the amount of Corn flour and went ahead with this simple yet very satisfying dessert recipe.

When it was time to jot it down , I opened up google for help with naming the sweet treat and I was shocked to find out that there is a Hawaiian traditional dessert called Haupia almost identical to the one I had just cooked up. The Hawaiian version is only coconut of course but other than that , ditto ! What are the odds of that !

So these pudding bites (or Rose haupia if you please ) are super duper easy with just a handful of ingredients – coconut milk , corn flour , sugar and rose syrup (roohafza in my case) . Its a no bake dessert but the pudding involves about 10 minutes of stovetop cooking and a few hours in the fridge.

The chopped pistachios were just to add some visual appeal , keeping in mind the festive theme but did add a little something -something texture wise . Rose petals would be just as fab !

These are creamy and jelly like and very refreshing ! And they don’t melt on you easily either !

These rose coconut pudding bites are like the Hawaiian dessert Haupia with rose flavour – velvety , refreshing and delicious !

Ingredients
  

  • 4 tablespoons cornflour
  • 3 tablespoons sugar
  • 400 ml or 1 3/4 cup coconut milk
  • 3 tablespoon rose syrup or roohafzah
  • 8-10 pistachios optional

Instructions
 

  • In a thick bottomed saucepan, stir together the corn flour and sugar. This reduces clumping.
  • Add the coconut milk and rose syrup.
  • Stir until mixed well
  • Heat this on medium heat while stirring continuously until mixture thickens. This may take 7 to 10 mins .
  • Take off heat and pour into a shallow pan ( 6 or 7 inches square or a wide loaf pan works )
  • Smoothen the top
  • Roughly chop the pistachios (if using ) and sprinkle over the top.
  • Chill for 3-4 hours.
  • Slice as desired and serve !

Notes

These stay good for 3-5 days while refrigerated 
They can be eaten cold or at room temperature 
You can line your mould with parchment if you want to remove the pudding slab out once set.
If you want to serve in dessert cups , you can use 2.5 to 3 tablespoons corn flour instead.
My measuring cup is 240 ml

You would think this would be a very sweet dessert ( I sure did !) but its surprisingly not too sweet but velvety smooth. Both coconut and rose are prominent on the taste buds but the aroma of coconut hits you even before you take your first bite. Velvetty smooth and very yum !
