Bet you havent seen this title before!
As it so happened , I came across a recipe of blondies that I wanted to try and I already have a recipe of white chocolate blondies on the blog. Remember the one with the strawberry on top ? And I am not against having more than one recipe for the same thing. Because lets face it . There is more than one way to get something done right. But I like to keep something different (however small in similar recipes .. like a flourless chocolate cake with rum or one with mocha. Or brownies with oreos or with a Bounty filling or brownies with a strawberry cheesecake topping. Or fudge with crushed biscuits or roasted nuts . Simple add ins that you can keep in or skip out . And you can mix and match!
So the blondies . I wanted to try them with some drama added but couldnt think of anything other than chopped nuts. Then a neighbour asked me for a colourful something to cheer up her little one. I thought of making funfetti cake but since i didnt have any on hand and it was the middle of lockdown (this was a while back) , i looked for something at home that might add some colour.
Tutti frutti it was. Not as playful as funfetti or vibrant as rainbow sprinkles but it did the trick.
You would think that tutti frutti in sweet blondies would be sweetness overdone. Strangely , not so .
You would also think that two blondie recipes with the same ingredients and similar proportions would taste similar, Surprise surprise. Not so again!
While my previous white chocolate blondie was fudgy and rich (basically a brownie like feel without dark chocolate ) , this one was lighter and verged every so slightly towards the cakier side. Which I generally dont like in my brownies , but I quite enjoyed in these blondies. I more or less followed this recipe for the blondies.
Both were delicious. Like I said , always more than one way to get something right!
Tutti frutti white chocolate blondies ( blondies with candied fruit)
Ingredients
- 150 grams or 3/4 cup white chocolate
- 75 grams or 1/3 cup unsalted butter
- 100 grams or 1/2 cup granulated or castor sugar
- 2 eggs at room temperature
- 1 teaspoon vanilla extract
- 125 grams or 1 cup all purpose flour
- 1/4 teaspoon salt
- 1/2 cup tutti frutti or candied fruit
Instructions
- Preheat your oven to 180 C or 350 F. Line a 8 inch square pan with foil or parchment paper such that atleast two opposite sides are long enough ( to pull out the blondies when done).
- In a double boiler or a thick bottomed saucepan, take the butter and white chocolate (both chopped to small pieces) , heat on low . Stir continuously or often until both are melted and mixed smoothly.
- Take off heat and whisk in the sugar
- Whisk in the eggs , ONE BY ONE . Whisk well after each egg.
- Whisk in the vanilla
- Add the flour and salt. Whisk until combined (you cant see flour anymore )
- Add the candied fruit or tutti frutti , reserve a hand full. Fold in gently.
- Pour the thick batter into the prepared pan immediately and smooth the top. Sprinkle reserved fruit on top
- Bake at 180 C / 350 F for 20-22 minutes until a toothpick inserted comes out with moist crumbs. The edges would have separated from the sides of the pan and may be light brown (but dont wait for this , decide doneness based on toothpick test)
- Cool in pan, lift out blondie slab and slice !
Notes
You would think that a candy like rich treat with tutti frutti thrown in would appeal to kids alone . Right ? Not entirely strangely , but not so ! Save some for the kids or the adults of the house will polish these off!
If you are wondering what to do with any left over , whip up a batch of these Karachi bakery style cookies or maybe add in some in your next wholewheat cake .
