The easiest chocolate cupcakes

Moist and delicious chocolate cupcakes that can be made wholewheat too!

Ingredients
  

  • 125 grams or 1 cup all purpose flour or whole wheat flour
  • 150 grams or 3/4 cup granulated sugar
  • 40 gram or 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 egg
  • 1/2 cup or 120 ml curd or yoghurt at room temperature
  • 1/3 cup or 80 ml water
  • 1/4 cup or 60 ml vegetable oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 180 C . Line a muffin pan with paper liners or grease and flour the tin.
  • Mix all the dry ingredients , that is , flour , sugar , cocoa , baking soda , baking powder and salt , with a whisk .
  • In another bowl, mix the wet ingredients , that is , curd , coffee , oil , egg and vanilla until well mixed.
  • Add the wet ingredients to the dry ingredients and mix until smooth. Its a batter of medium thickness.
  • Fill your liners 2/3rds full. Bake at 180 C for 22-24 minutes or until a toothpick inserted in the centre comes out clean.

Notes

These last fro about 3 days in airtight container.
If you have a smaller oven or a muffin tray with 6 cavities , just bake in batches. The batter remains fine even after resting.
My measuring cup is 240 ml.
