Rose coconut pudding bites
These rose coconut pudding bites are like the Hawaiian dessert Haupia with rose flavour - velvety , refreshing and delicious !
- 4 tablespoons cornflour
- 3 tablespoons sugar
- 400 ml or 1 3/4 cup coconut milk
- 3 tablespoon rose syrup or roohafzah
- 8-10 pistachios optional
In a thick bottomed saucepan, stir together the corn flour and sugar. This reduces clumping.
Add the coconut milk and rose syrup.
Stir until mixed well
Heat this on medium heat while stirring continuously until mixture thickens. This may take 7 to 10 mins .
Take off heat and pour into a shallow pan ( 6 or 7 inches square or a wide loaf pan works )
Smoothen the top
Roughly chop the pistachios (if using ) and sprinkle over the top.
Chill for 3-4 hours.
Slice as desired and serve !
These stay good for 3-5 days while refrigerated
They can be eaten cold or at room temperature
You can line your mould with parchment if you want to remove the pudding slab out once set.
If you want to serve in dessert cups , you can use 2.5 to 3 tablespoons corn flour instead.
My measuring cup is 240 ml
